Tasting Notes & The SCAA Flavor Wheel
Coffee naturally exhibits unique flavors and aromas that differ based on a variety of influences such as country of origin, growing altitude, processing method, storage, roast profile, brewing methods and so on. Each of these will influence the tasting notes, or flavors and aromas, of the coffee. The tasting notes listed on each of our coffees are indicative of that coffee's natural and unique level of acidity, sweetness, and mouthfeel.
In order to assist coffee professionals and consumers to discuss these unique coffee characteristics, the Specialty Coffee Association of America (SCAA) published the original industry standard coffee flavor wheel back in 1995 and issued an updated wheel in January 2016 (shown above). The flavor wheel was developed from a similar tool that is used in the wine industry. For more information, please see the SCAA website.
