CHEMEX® brewer, CHEMEX® bonded coffee filter, kettle, low mineral content water, kitchen scale, burr grinder, mug, fresh-roasted Gray Duck Coffee
Step 1: Boil a kettle of water.
Step 2: Weigh the whole bean coffee to how much water you are using: 68 grams of whole bean coffee per 1 liter of water. Adjust based on your preferred strength.
Step 3: Grind the coffee using a burr grinder to a medium-coarse grind.
Step 4: Open a CHEMEX® filter into a cone shape so that one side has three layers and place it in the CHEMEX® with the three-layer portion covering the pouring spout.
Step 5: Run a little bit of hot water through the filter to rinse and preheat the brewer. Pour out the preheat water keeping the filter in place.
Step 6: Deposit the ground coffee into the filter and shake gently to level off the coffee. Place the brewer on the scale, then tare to set scale to zero.
Step 7: Once the water has boiled, turn off the heat and wait 10 seconds. Wet the coffee grounds with the hot water and let coffee “bloom”, or foam up for 30 seconds.
Step 8: Next, slowly pour water over the grounds using a circular or back-and-forth motion while keeping the water level below the top of the brewer and avoiding the sides of the filter.
Step 9: Continue adding water until you have reached the target amount of water on the scale. (Tip: 1,000 grams = 1 liter)
Step 10: Lift the filter and grounds out of the brewer and discard.
Step 11: Pour into your favorite coffee mug. Enjoy!
